02 Ingredients

  • 2 Pork Chops (bone-in, about 1 inch thick)

  • 1 cup Breadcrumbs (preferably fresh)

  • 1 small Onion (finely chopped)

  • 2 cloves Garlic (minced)

  • 2 tbsp Olive Oil

  • ½ cup Chicken Broth

  • 1 tsp Dried Thyme

  • 1 tsp Dried Rosemary

  • Salt (to taste)

  • Black Pepper (to taste)

  • 1 tbsp Fresh Parsley (optional)

  • 1 Egg (beaten)

  • 1 tbsp Parmesan Cheese (optional)

03 Method

Step 1
Preheat oven to 180°C (350°F). Cut a deep pocket in each pork chop, being careful not to cut through the meat completely.

Step 2
In a skillet, heat Olive Oil over medium heat. Add chopped Onion and Garlic, and sauté for 3–4 minutes until softened. Remove from heat.

Step 3
In a mixing bowl, combine Breadcrumbs, Chicken Broth, Dried Thyme, Dried Rosemary, Salt, Black Pepper, Fresh Parsley (optional), and Parmesan Cheese (optional). Stir in the beaten Egg to bind the mixture together.

Step 4
Stuff each pork chop with the breadcrumb mixture, using a spoon to pack the stuffing tightly. Secure the opening with toothpicks or kitchen twine.

Step 5
Heat a little more Olive Oil in the same skillet. Sear the stuffed pork chops for 2–3 minutes on each side until golden brown.

Step 6
Transfer the seared pork chops to a baking dish and bake in the preheated oven for 20–25 minutes, or until the pork chops are cooked through (internal temperature should reach 145°F / 63°C).

Step 7
Remove the toothpicks or kitchen twine, serve the stuffed pork chops with your favorite sides like mashed potatoes or roasted vegetables, and enjoy!
