02 Ingredients
2 Chicken Breasts (halved lengthwise into cutlets)
1 cup All-Purpose Flour
2 Eggs (beaten)
1½ cups Breadcrumbs (Italian seasoned preferred)
½ cup Grated Parmesan Cheese (divided)
1 cup Tomato Sauce (marinara)
1 cup Mozzarella Cheese (shredded)
2 tbsp Olive Oil (for frying)
1 tbsp Butter (for frying)
Salt (to taste)
Black Pepper (to taste)
Optional Fresh Basil (for garnish)
Optional Cooked Spaghetti (to serve)
03 Method
Step 1
Preheat oven to 200°C (400°F). Season Chicken cutlets with Salt and Black Pepper.
Step 2
Dredge Chicken first in Flour, then dip in beaten Eggs, then coat in Breadcrumbs mixed with half of the Parmesan.
Step 3
Heat Olive Oil and Butter in a skillet over medium-high heat. Fry Chicken cutlets for 3–4 minutes per side until golden brown. Remove and set aside.
Step 4
Place fried cutlets in a baking dish. Spoon Tomato Sauce over each piece.
Step 5
Top with Mozzarella and the remaining Parmesan.
Step 6
Bake for 12–15 minutes until the cheese is melted and bubbly.
Step 7
Garnish with Fresh Basil and serve hot, optionally with Spaghetti.
