Chicken Soup (The Soul of American Comfort Food)

02 Ingredients
2 Chicken Breasts or Thighs (boneless, skinless)
6 cups Chicken Broth
2 Carrots (sliced)
2 Celery Stalks (sliced)
1 small Onion (chopped)
2 cloves Garlic (minced, optional)
150g Egg Noodles (or 1 cup Rice)
1 tbsp Olive Oil or Butter
Salt (to taste)
Black Pepper (to taste)
1 Bay Leaf (optional)
Fresh Parsley (chopped, for garnish)
03 Method
Step 1
Heat Olive Oil or Butter in a large pot. Sauté Onion, Carrots, and Celery for 3–4 minutes.
Step 2
Add Garlic (if using) and cook for 30 seconds.
Step 3
Pour in Chicken Broth and add Bay Leaf. Bring to a boil.
Step 4
Add Chicken pieces, reduce heat, and simmer for 15–20 minutes until chicken is cooked through.
Step 5
Remove Chicken, shred it with two forks, and return to the pot.
Step 6
Add Egg Noodles (or Rice) and cook until tender (about 8–10 minutes for noodles, 15 minutes for rice).
Step 7
Season with Salt and Black Pepper to taste.
Step 8
Garnish with Fresh Parsley and serve hot.
