02 Ingredients
For Dressing
500g Large Shrimp (peeled, tails on)
½ cup All-Purpose Flour
½ tsp Salt
½ tsp Black Pepper
2 Eggs (beaten)
1 cup Shredded Coconut (sweetened or unsweetened)
½ cup Panko Breadcrumbs
Vegetable Oil (for frying)
For Serving
Sweet Chili Sauce
Lime Wedges (optional)
03 Method
Step 1
Pat Shrimp dry with paper towels. Season lightly with Salt and Black Pepper.
Step 2
Prepare three bowls: Flour in one, Eggs in another, and Coconut mixed with Panko in the third.
Step 3
Dredge each Shrimp in Flour, then dip in Egg, and finally coat with Coconut-Panko mixture.
Step 4
Heat Oil in a skillet or deep fryer to 175°C (350°F).
Step 5
Fry Shrimp in batches for 2–3 minutes per side until golden brown and crispy.
Step 6
Remove and drain on paper towels.
Step 7
Serve hot with Sweet Chili Sauce and optional Lime Wedges.
