02 Ingredients
1 Whole Chicken (about 1.5–2kg)
3 tbsp Butter (softened)
4 cloves Garlic (minced)
1 Lemon (halved)
2 sprigs Fresh Thyme
2 sprigs Fresh Rosemary
1 Onion (quartered, optional)
Salt (to taste)
Black Pepper (to taste)
2 tbsp Olive Oil
03 Method
Step 1
Preheat oven to 200°C (400°F). Pat the Chicken dry with paper towels.
Step 2
Rub the whole Chicken with Butter, Garlic, Salt, and Black Pepper, including under the skin if possible.
Step 3
Stuff the cavity with Lemon halves, Onion, and fresh herbs (Thyme and Rosemary).
Step 4
Place the Chicken on a roasting pan or oven-safe dish. Drizzle with Olive Oil.
Step 5
Roast in the oven for 1 hour 15 minutes (or about 20 minutes per 500g), basting occasionally with pan juices.
Step 6
Check doneness: internal temperature at the thickest part of the thigh should reach 75°C (165°F).
Step 7
Remove from oven and let rest for 10 minutes before carving.
Step 8
Serve with roasted vegetables, mashed potatoes, or gravy.
