Shrimp Fried Rice (Chinese-American Takeout Favorite)

02 Ingredients
250g Shrimp (peeled and deveined)
2 cups Cooked Rice (preferably day-old)
2 Eggs (beaten)
½ cup Peas and Carrots (frozen or fresh)
2 Green Onions (chopped)
2 tbsp Soy Sauce
1 tbsp Oyster Sauce (optional, for depth)
2 tbsp Vegetable Oil (divided)
1 tsp Sesame Oil (optional)
Salt (to taste)
Black Pepper (to taste)
03 Method
Step 1
Heat 1 tbsp Oil in a large wok or skillet. Scramble the Eggs until just set, then remove and set aside.
Step 2
Add another 1 tbsp Oil to the pan. Stir-fry Shrimp for 2–3 minutes until pink and cooked through. Remove and set aside.
Step 3
Add Peas and Carrots to the pan, stir-fry for 2 minutes.
Step 4
Add Cooked Rice, breaking up clumps. Stir-fry for 3–4 minutes until heated through.
Step 5
Return Shrimp and Eggs to the pan. Pour in Soy Sauce, Oyster Sauce, and Sesame Oil (if using). Toss everything together.
Step 6
Season with Salt and Black Pepper.
Step 7
Sprinkle Green Onions on top, stir once more, and serve hot.
